If you want your countertop to have an aged look, you can oil the soapstone once or twice to the desired shade of color and never oil it again. This initial oiling will create an aged, charcoal look on the surface of the countertop. When you initially oil the soapstone, the oil will not penetrate the non-porous surface. It will eventually fade and should return to its original light gray color. Under some circumstances, the soapstone will not return to the original color but quite close to it.
